Cashew Chicken Salad Recipe

Matt suggested posting some recipes that people have been asking for on my blog...here is one and with this recipe you really can't go wrong! Throw in what sounds good and looks good to you! This is what I use as far as ingredients.

4 cooked, cooled and cubed chicken breasts
1-2 cups mayo(depending on how runny you want the salad
2 Tbsp dry ranch dressing (in packet)
Salt and Pepper(to taste)

Mix these ingredients and let refridgerate for a couple hours
Then add these ingredients

Half a bunch of red grapes(halved)
3/4 stalk chopped celery
1/2 can of cashew halves


You can either put it on a roll or croissant or whatever

There's Something in the Air

Well, it must be fall or can we say winter with as cold as it's been. Well I love the Fall time. These are a few ways I can tell it's Fall....

1. There are sented pinecones that fill the air in Walmart.
2. All my favorite colors are in the craft stores to fill me home with cute decos
3. Football on almost every channel (Thursday through Monday)
4. It gets dark earlier
5. The leaves are changing, especially in the canyon and mountains
6. The heater comes on
7. The streets are more crowded with students
8. The cookie business slows down as the cracker and easy cheese business picks up
9. It's jeans time
10. Halloween candy fills the store shelves and my shopping basket too
11. Pumpkin cookies, coobler, bread or pie is served for bunco or enrichment night
12. I get out my Baked Apple, Pumpkin Spice or Butter Pecan pie Salt City candles
13. I cuddle up in a blanket
14. Christmas stuff starts showing up in stores
15. I start thinking about how much Christmas is going to cost

Painting Drama

I've said it time and time again...I hate painting but I continue to do it and I screw things up everytime. Buying a new home is a lot of work but buying white walls is even more work. I decided instead of upgrading an extra $3000 to have my walls painted before I moved in, I would take it upon myself to do the dreadful job of painting and try again. This time with higher ceilings and a 15 month old. Now I wish I would have chose the $3000 option as I continue to get paint on the wall and trim I wanted white. This is my least favorite project so far, but if I stand far enough away from the finished project, I think it makes the biggest difference in my home thus far.

How are your painting skills? I need some good tips on two tone painting for when I'm ready to face this one again.

Mall Shopping Habits

Have you been to the mall lately to see what is in? I just decided I was getting old. The crowd there speaks of teeny boppers with the $20 their mom gave them to get them out of their hair. Then I remembered when I was that age. I only got $5 and it was because I washed my parents car that day all morning. I spent most of the day getting ready hoping to see some cute boy there but little did I know the boys didn't go to the mall, they were somewhere else.

After high school, as a young adult I would go to the mall often. Generally it was because I wanted a new outfit for the party or dance that night. The money was plentiful and it wasn't anything for me to spend $200-$300 in one visit. Those were the good old days.

Now as a young mom, I go to the mall for Haley. It is a lot more fun to buy her clothes and doll her up. The funds are tighter now that I have the usual phone, house and car bill and now wow a diaper and formula bill too. Wow have things changed. I'm definatly getting older and my shopping habits have changed.
