Egg Rolls and Fried Rice

My mother in law gave me these yummy recipes. Here is for you all to try!

Egg Rolls

Egg roll wrappers
1 lb. ground sausage(cooked)
1 cup onion cut into small pieces
1/4 head of cabbage cut into small pieces
1 cup shredded carrots
salt and pepper to taste
soy sauce to taste

Saute cabbage and onion in a little bit of oil. Remove from heat, mix the rest of ingredients except wrappers. Wrap some of the mixture into wrappers. Roll up wrappers and paste closed by putting your finger into a bowl of cold water and running it across the edge of the wrapper to seal closed. Fry into an inch of oil. Turn and fry onto the other side. Serve with sweet and sour and soy sauce.


Fried Rice

4 strips cooked and cut up into small pieces bacon
1/4 of a head of cabbage cut into small pieces
1 cup onion cut into small pieces
2 cups cooked rice
1 cup frozen peas and carrots
6 eggs scrambled and cooked
Soy sauce to taste
salt and pepper to taste

Make rice, set aside. Cook bacon into pan, remove bacon but not the grease. Scramble eggs into the grease. Add the onion and cabbage. Saute for a few minutes. Add frozen veggies. Last add soy sauce , salt and pepper, cooked rice and bacon and heat all together until cooked through.

Yummy! We usually do Elena's egg rolls, but I think they have double the ingredients! I will have to try these.

Egg rolls are one of my favorite foods and I don't get them very often so I'll have to try making these myself...when I actually feel ambitious enough to cook.
