Sweet Pulled Pork and German Pancakes

Sweet Pulled Pork

Not that they go together but they are both tasty and on the mind today!

3 lbs. pork roast
2 C. dark brown sugar
1 C. worchestsire (sp)
1 tsp dried oregano
1 tsp powdered ginger
1 tsp salt
1 tsp chili powder
1 tsp garlic powder
1 Tbsp dreied minced onion
1 can red enchilada sauce

Cook all ingred. except the 1 cup brown sugar and enchilada sauce in crock pot on LOW(seems like forever...I think it depends on the size of roast too) for 15-20 hours. One hour before serving take roast out and shred meat. Remove fat. Drain crock pot and put meat back in and add the enchilada sauce and sugar.

German Pancakes

Preheat oven 450 degrees
1 cup flour
6 eggs
1 cup milk
4 tbsp melted butter
1/2 tsp salt
1 tsp sugar

Place in a 9 x 13 for 20 minutes. It will puff and brown on the edges. Cut into squares and serve with powdered sugar, syrup or jam.
